Five years with Leonora

What a sourdough starter has taught me about patience, consistency and building a business.

Leonora was born in a glass jar, with flour, water and a lot of curiosity. Five years later she’s still alive, and I’m still learning from her.

A sourdough starter can’t be rushed. Feed her on time and she grows. Forget her and she gets sad, but she almost always forgives. Building a business feels a lot like that.

Three things I learned

  1. Consistency beats talent. A little feeding every day works better than a big effort once in a while.
  2. Environment matters. Heat, flour, water: everything changes the result. Projects are the same.
  3. Sharing makes her grow. Leonora already has daughters in several kitchens.

Next week I’ll tell you about my Sunday bread-baking routine.
